| This edition of my cookbook
is dedicated to my mother, Antonia Ramos Revilla. The whole
world knew her as Toni. She is known as Dama to her grandchildren
and great-grandchildren. The daughter of Spanish immigrants,
Emilio and Juliana Ramos, she was born in 1916 near Vacaville,
California. They lived within a tightly held small Spanish community,
highly disciplined and hard working. The influences of her early
life were Spanish. With food at the center, special days were
honored in family festivites.

Revilla Doyle’s mother’s maiden name was Ramos,
the family name handed down from her Spanish immigrant parents.
Her mother’s and grandmother’s most important heritage
passed on to her was food, how to cook it and how to serve it,
both processes intended to create a warm conversational time
at table for family and guests. These recipes handed down through
two generations are meant for the family to share in the food
preparation, a kind of daily ceremony in which all participate,
interact and share their news of the day. Start with Caldo
de Pescado on page 3 and finish with the Flan
on page 137 for a perfect meal. |
